01The counter
Fourteen seats. One hearth. No gas, ever.
Chef Tawan grew up cooking over charcoal in Nakhon Si Thammarat. After ten years in Bangkok kitchens she built a counter with no gas line at all: one hearth of longan and tamarind wood, a clay tao for curries, and a steel plancha heated only by embers.
You sit close enough to feel the heat. The kitchen cooks one seating at a time, so all fourteen guests eat each course together, and the chefs serve and explain every plate themselves.
